For this Gluten Free Old-Fashioned Buttermilk Cornbread recipe, you will need some gluten-free flour mix. Below are the directions to the one I used in this video, but you can also find gluten-free flour mixes in the grocery store if you are short on time. However, I have not tried any of these mixes and cannot say how they would alter the end result of this recipe. Let me know if you try a store mix, and if it worked well for you.

GLUTEN FREE FLOUR MIX:
(mix this up prior to starting the cornbread recipe)

2 cups white rice flour
2/3 cup cornstarch
1/3 cup tapioca starch

Whisk these all together and seal in an air-tight container.

I like to double this flour mix recipe to have some extra for the future, but if you are only making this one gluten free recipe, you could easily half the flour recipe instead.

GLUTEN FREE OLD FASHIONED BUTTERMILK CORNBREAD RECIPE:
INGREDIENTS:

½ cup butter
2/3 cup white sugar
2 eggs
1 cup buttermilk
1 tsp. baking soda
3 tsp. baking powder
1 cup cornmeal
1 ¼ cup gluten free flour mix
½ tsp. salt
1 tsp. xanthan gum
½ cup milk

DIRECTIONS:
1. Preheat oven to 375 degrees, and spray an 8×8 dish with cooking spray, or put liners in cupcake tray
2. In medium saucepan, melt butter over low heat
3. Remove from heat and stir in sugar. Set aside.
4. In medium-sized bowl,, whisk together all other dry ingredients including gluten free flour, baking soda, baking powder, cornmeal, xanthan gum, and salt. Set aside.
5. Into butter/sugar mixture, add eggs and mix well. Stir in buttermilk and milk.
6. Add butter mixture into flour mixture and mix well.
7. Pour batter into prepared baking dish
8. Bake at 375 degrees for 15 minutes (cupcake size) or for 25-30 minutes (8×8 baking dish).
9. Insert/remove toothpick and when it is clean, your cornbread is done. Serve warm.
10. Enjoy!
