NOODLES WITH THAI INSPIRED PEANUT SUACE RECIPE:
Serving Size: 4
NOODLES:
1 Box Brown Rice Noodles (my favorite brand is Annie Chun's)
1 Red Bell Pepper
1 Cucumber
1/4 Cup Chopped Cilantro
1 Tbsp Fresh Chopped Ginger
2 Stalks Chopped Green Onion (Scallions)
Kimchi (as much as you prefer, I use about 1/2 cup)
PEANUT SAUCE:
** If you have a nut allergy, feel free to omit the peanut butter and use more tahini instead. I've done this before when I didn't have any peanut butter and it tastes just as good!
3 Tbsp Peanut Butter
1 – 2 Tbsp Tahini
1 Tsp Gluten Free Tamari or Soy Sauce
Juice from 1 Lemon
Siracha to Taste
* Huy Fong Foods brand is vegan and gluten free
1/4 Cup Water or more depending on desired thickness

Optional: Feel free to toss the noodles in sesame oil with either rice or apple cider vinegar, however I normally leave this part out.
I encourage you to be creative with the ingredients! I'm always experimenting with this recipe and I like to add in different types of veggies, depending on what I have on hand at the time. Have fun! 🙂
