One-Pot Chicken and Rice with Swiss Chard | Everyday Food with Sarah Carey

I have some good news and some bad news. The bad news? There is no dishwashing fairy. Doesn’t exist; never did. Sorry! The good news? Today’s recipe requires only one pot.

Sarah’s Tip of the Day:
You probably already have a lemon, some basmati rice, chicken broth, an onion, and garlic around the kitchen. Swing by the grocery store for some carrots, a bunch of Swiss chard, and some chicken leg quarters and you’ll be ready to get cooking! Recipe Ingredients:
4 chicken leg quarters (about 2 pounds total), patted dry
Coarse salt and ground pepper
3 garlic cloves, roughly chopped1 bunch Swiss chard (10 ounces), stems cut into 1/2-inch pieces, leaves torn into 2-inch pieces
1 small yellow onion, diced small
2 medium carrots, diced medium
1 1/2 teaspoons finely grated lemon zest, plus wedges for serving
1 1/2 cups basmati rice
2 1/2 cups low-sodium chicken broth
