Whenever it comes to paleo baking it is important to know that it can be quite tricky to get right. This is mainly due to the fact that you can’t use a lot of traditional ingredients such as white flour. That said this paleo blueberry muffin recipe is pretty damn easy as you can see in the video. They come out be nice and moist so they’re super yummy.

This mixture will also work just fine in small or large muffin tins. You can also use papers or just simply grease the tin depending on what you prefer.

If you find that your muffins are cooking too fast and starting to burn, then covering them in foil will help prevent them from burning. This will allow the muffin to finish cooking but making sure it is still edible.

I typically prefer to use fresh berries but unfortunately they’re not available all the time. If you can’t get fresh, then frozen berries will also work just fine.

The last thing you should look out for is making sure you beat the liquids together well enough. If you don’t beat them together, you may have hard time mixing the dry ingredients through properly.
