INGREDIENTS:
2 Filets of halibut approx 6oz each
3-4 small yukon gold potatoes
1/2 cup halved cherry tomatoes
1/4 cup sliced green olives (Preferably Castelvetrano)
small handful of arugula
1 tbsp sour cream
1 tbsp whole grain mustard
salt & pepper to taste
canola oil for cooking
olive oil for seasoning
