Stressed about what to bring to this year’s holiday party? This week Laura whips up 3 easy and delicious dips that are bound to impress your pickiest party-goers. FULL RECIPE BELOW.

DIP RECIPES:

1. Hummus
Goes with: radishes / heirloom white carrot / golden beets

INGREDIENTS:
-3 medium-sized zucchini, peeled and roughly chopped
-1 cup nut pulp (left over from making almond milk!) or sesame seeds (grind in coffee grinder or high-speed blender)
-¼ cup fresh lemon juice
-2 cloves garlic
-1 T smoked paprika
-2 t cayenne
-1 t salt

PROCESS:
-Add all ingredients except the nut pulp to blender and blend.
-Add nut pulp a bit at a time (just to make sure it doesn’t get too thick for your machine)
-Add a bit of water if necessary.

2. Ranch
Goes with: radishes / heirloom white carrot / golden beets

INGREDIENTS:
-2 cups cashews, soaked overnight
-½ cup fresh lemon juice
-¼ cup fresh chives
-3 T dried parsley
-1 clove garlic
-1 T onion powder
-1 t salt

PROCESS:
-Strain cashews and add them to blender with the rest of the ingredients.

3. Caramel Apple Dip
Goes with: Granny Smith Apples

INGREDIENTS:
-2 cups pitted Medjool dates, soaked 10 mins
-1/3 c coconut oil
-2 T lemon juice
-½ t salt
-1 t vanilla extract

PROCESS:
-Soak dates overnight
-Strain dates, then add to blender with the rest of your ingredients and pulse.

BENEFITS:
– High in Vitamin C
– Healthy Fats
– Good for Digestion
