Plant-Based Veggie Pasta Stir Fry Recipe (Oil + Soy + Gluten FREE) | Minimalist Vegan

Hi guys! A lot of you have requested some recipe videos so here’s something I make quite regularly. Let me know if you give it a try and if you’d like to see more cooking videos in the future. 🙂

INGREDIENTS: SERVES 4-6

STIR FRY:
1 RED PEPPER
1 SWEET ONION
3 CUPS BROCCOLI
1 CUP CARROTS
(OR ANY VEGGIES OF YOUR CHOOSING… BOK CHOY, GREEN PEPPER… ETC)
1 PACKAGE OF PASTA

SAUCE:
3/4-1 CUP COCONUT AMINOS
1 TBS MAPLE SYRUP
SRIRACHA HOT SAUCE (TO TASTE)
GRATED GINGER (TO TASTE)

Cook Pasta according to package instructions. In a separate pan or wok, water sauté veggies until tender. Meanwhile, prepare sauce ingredients. When the pasta is finished cooking, rinse with cold water to prevent sticking and add to veggies. Pour over sauce. Add any toppings of your choice. I love adding raw peanuts or sesame seeds, scallions, cilantro- whatever I have on hand. Enjoy hot, cold, or room temperature. 🙂
