Boneless, skinless chicken breasts are one of the best things to pick up at the grocery store because they’re so incredibly versatile. (Stock up when they’re on sale—they freeze well!) Poaching is one of my favorite ways to prepare chicken breasts because, if you do it right, you get moist, tender meat every time.

Sarah’s Tip of the Day:
In this recipe you poach chicken breasts in salted water with a halved yellow onion. Then you shred the chicken and combine it with toasted walnuts, golden raisins, celery, red onion, mayonnaise, Greek yogurt, and fresh tarragon—it’s a mind-blowingly delicious chicken salad.
