Pork Curry Noodle Soup I Erwan Heussaff



Erwan makes his version of Peranakan laksa, a piping hot bowl of comfort and spice. It may become your new wintertime wok favorite.

2 tablespoons chopped garlic
1 tablespoon minced ginger
1/2 cup sliced white onion
1 teaspoon turmeric
1/2 teaspoon cumin
1 teaspoon brown sugar
1 teaspoon curry powder
1/2 teaspoon Paprika
1/2 teaspoon Cayenne
1 teaspoon onion powder
1 teaspoon garlic powder
200 grams of sliced pork chops, boneless
1 1/2 cup of chicken broth
1 teaspoon of fish sauce
2 portions of fresh egg noodles
1 cup coconut milk
1 teaspoon chili paste
1/2 teaspoon chili flakes
Juice of 1 lime
Chili flakes and chives for garnish

1.) Start by frying off the garlic, ginger, and onions, until translucent.
2.) Mix in all the spices and bay leaf.
3.) Add the pork and brown slightly.
4.) Add chicken broth and fish sauce.
5.) Place in the egg noodles and simmer until they cook through.
6.) Add coconut milk, chili paste, and flakes. Simmer for 5 minutes.
7.) Plate and top with lime, chives, and chili.
