Today I made awesome RAINBOW Ice Cream Sandwiches using a simple cookie recipe and delicious vanilla ice cream.

Tools & Equipment:
Circle cutter (similar in size to your cookie roll)
2 x baking trays, 1 lined with wax/baking paper
Rolling Pin
Sharp knife
Spatula
Ingredients:
Plain flour
Good quality vanilla ice cream – the higher quality, the better your softened ice cream tray will re-freeze

Rainbow colours – I used americolour paste colours
