Slim Jim Meatballs

13 Slim Jims, roughly chopped
1/2 cup panko
1/2 cup whole milk
1 sausage link, casing removed
1 yellow onion, chopped
1/2 cup roughly chopped parsley
2 eggs

1.Preheat broiler. Line a baking sheet with parchment paper.
2.Combine panko and milk in a small bowl and let sit 5 minutes. 3.In a food processor combine chopped Slim Jims, panko and milk mixture, sausage, onion, parsley and eggs. Pulse to combine and then run the food processor until a paste forms.
4.Dip your hands in water and roll the meat mixture into balls. Place on parchment paper lined baking sheet and cook under broiler for 10 minutes until golden brown. Skewer meatballs and serve.
