Soft, little, salty pretzel bites.
RECIPE
3/4 cup warm water
1 Tbsp. sugar
1/2 Tbsp. active dry yeast
2 cups rice flour
1/4 cup tapioca starch
1 tsp. salt
2 Tbsp. olive oil
6 cups water (for boiling)
2 Tbsp. baking soda
Course sea salt for sprinkling
To 3/4 cup warm water, add sugar, and yeast. Set to the side. To a bowl, add rice flour, tapioca starch, and salt. Stir well. Add oil, and the yeast mixture. Stir until dough forms. Shape dough into a ball, and place back into the bowl. Cover and let rise about 45 minutes. Shape dough into about 32 pretzel bites and put on a pan covered with parchment paper. Preheat the oven to 450 degrees Fahrenheit. Put 6 cups water and baking soda into a pot, and bring to a boil. Drop the pretzel bites into the boiling water about five at a time, and let boil about 20 seconds. Remove and place back on the pan. Sprinkle with sea salt while they are still wet. Repeat until all the pretzels have been boiled, and salted. Transfer the pretzel bites to a new pan lined with fresh parchment paper. Bake 12-15 minutes. These are best eaten fresh out of the oven! Makes about 32 pretzel bites.
