Stuffed Churros

1/2 cup water
4 tablespoons butter
1 tablespoon light brown sugar
1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon baking powder
2 eggs
Vegetable oil
Cinnamon Sugar mix
1/2 cup Dulce de Leche
Vegetable oil, for frying

1.Heat a large pot of oil to 375 degrees.
2.Combine water, butter, and light brown sugar in a saucepan over medium heat, bring to a boil. Remove from heat and stir in flour, salt and baking powder with a wooden spoon. Stir until the dough pulls away from the sides of the pan. Beat in the eggs, one at a time, until the dough is smooth and has a shine.
3.Place dough in a pastry bag fitted with a large star tip. Pipe 5-inch churros in heated oil. Fry until golden brown and cooked through.
4.Have a sheet tray lined with paper towel. Remove churros to the prepared sheet tray and immediately toss to coat with cinnamon sugar mix. Allow to cool.
5.Put dulce de leche in a pastry bag fitted with a small round tip. Stuff churros on both ends and serve!
