Sick of starting the day with a cup of joe only to wear thin an hour later? Erwan shows us how to prepare Taho, a hot breakfast drink common in the Philippines that has protein and carbohydrates and will gear you up with plenty of energy to face the day.

INGREDIENTS

(makes 4)

2 pack extra silken tofu
1 ¼ cup brown sugar
2 cups of water
Sago or tapioca pearls, soaked overnight

RECIPE

Make caramel first; add brown sugar to a non-stick skillet, using a pastry brush with water to avoid burning around the sides.

Dissolve and boil, but don’t thicken too much. Add in water to make a colored caramel drink.

Place 2 tbsp of pearls in a glass, fill with tofu, and top with caramel syrup water.
