Valentine’s Chocolate Raspberry Parfait with Duff Goldman

Duff’s Valentine’s Parfait
8 ounces red melting chocolates
2 waffle cookies or Pizzelles, frozen
Framboise
Pink sanding sugar
1 chocolate cake
1 cup heavy cream
1 tablespoon powdered sugar
1 pint raspberries
1 package instant chocolate pudding, made to package instructions

1.Melt chocolates over a double boiler. Place melted chocolate in a piping bag and snip the very tip of the bag. On the inside of two martini glasses, pipe the chocolate into a design and allow it to set.
2.Remove waffle cookies from the freezer. Using a sharp knife, cut a small slit in each cookie so they fit over the rim of the martini glasses. Create a design on the cookies with the melted chocolate.
3.Pour enough Framboise and pink sanding sugar into separate shallow dishes to cover the bottom. Dip the rim of the martini glasses first into the Framboise and then into the sugar. Reserve.
4.Cut the cake with a ring mold that is the size of the center of the martini glass. Slice the cake lengthwise into 1/2-inch pieces.
5.Whip heavy cream to soft peaks. Beat in the sugar. Place whipped cream into a pastry bag and snip the tip of the bag.
6.To assemble the parfaits, pipe the whipped cream into the bottom of each martini glass. Top with a layer of raspberries followed by a slice of the chocolate cake. Pour Framboise over the cake to soak it slightly. Pipe another layer of whipped cream over the cake and top with more raspberries. Pipe a layer of chocolate pudding over the raspberries. To the center of the parfait, pipe more whipped cream, top with a raspberry and pink sanding sugar. Garnish with the waffle cookie and enjoy!
