On the 5th day of Vegmas my true love baked for me, 5 Peppermint Cupcakes! 4 pies of wheat, 3 lentil loafs, 2 Snowman Pops & a House made of Gingerbread and candy!

✦ VEGAN Candy Cane Cupcakes (GF) ✦
Dry:
¾ c oat flour
¾ c Sorghum flour or whole wheat pastry flour
1 tsp baking soda
½ tsp baking powder
¼ tsp salt
2tb – ¼ c cocoa powder
3 tb nondairy chocolate chips (optional)

Wet:
½ c brown sugar
1 c Westsoy chocolate peppermint soy milk or nondairy chocolate milk
1/4 cup unsweetened applesauce
2 tb balsamic vinegar
1 tsp vanilla extract
¼ tsp peppermint extract

Icing:
1 c powdered sugar
1 tb nondairy milk
2 tb cocoa powder
1 tsp vanilla extract
crushed candy candy topping

Directions:
Preheat oven to 350F.
Line a muffin pan with parchment paper or use nonstick pan.
In a large bowl, whisk flour, baking powder, baking soda, salt and cocoa powder together.
In a medium bowl, whisk applesauce, soy milk, sugar, extracts and vinegar until well combined.
Pour wet mixture into dry mixture; stir until just combined.
Stir in nondairy Chocolate Chips (optional).
Spoon batter into muffin cups 3/4 full, and bake for 20-25 mins until toothpick inserted in the center comes out clean.
Transfer to wire cooling rack.
In a small bowl, whisk icing ingredients together. Add more nondairy milk if needed.
Once the cupcakes are cool, spread icing over the top and candy cane pieces.
