On the 7th Day of Vegmas My Vegan love made for me, 7 Slices of gingerbread french toast, 6 Fruity Tartlets, 5 Peppermint Cupcakes! 4 pies of wheat, 3 lentil loafs, 2 Snowman Pops & a House made of Gingerbread and candy!

✦ Gingerbread French Toast ✦
MARINATE:
1 long loaf bread, sliced about 3/4-inch thick,
1/2 cup plant milk
1 Tb cup maple syrup
1/4 cup molasses (not blackstrap)
1 tsp cinnamon
1 tsp ginger, ground
1/4 tsp nutmeg, ground
1/4 tsp cloves, ground
Pinch of salt (optional)
BATTER:
1 cup plant milk
1/4 cup chickpea flour
confectioners’ sugar, walnuts, & dried cranberries for dusting, optional

DIRECTIONS:
Line an pan with parchment paper.
Add fanned sliced bread slightly overlapping; set pan aside.
Add the next 7 ingredients, through optional salt, and whisk to combine.
Slowly and evenly pour mixture over the bread, gently separating the slices with your fingers, and pour marinade between the slices.
Cover pan with parchment paper then foil to prevent fridge smells, and place in fridge for at least 4 hours, but overnight (or up to 24 hours) is better.
The next morning, carefully spoon any pooled liquid at the bottom of the pan over the top of the bread, redistributing it and re-drenching any white patches or dry looking places.
Heat non-stick griddle on low heat.
Whisk batter in a shallow bowl. Quickly dip a bread slice into wet batter and cook for until lightly browned on each side.
Optionally, dust with confectioners’ sugar, walnuts ect
