DAY3: Still in plastic bag, still delicious, not really flexible, but slightly soft. Had it with butter, did not toast it.

DAY 2: I left it sliced in a plastic bag on the table, it is still soft and fairly flexible. Made a sandwich and it still has an excellent taste, it is not dry or crumbly. You do not need a glass of water to swallow it.

Here it is!!! It is very simple. If you need instructions for making GF bread in a bread machine, please check out the first several videos I made, I have one in there somewhere for making basic gluten free bread in a machine.

Gluten Free Egg Free Milk Free Yeast Bread Machine Recipe
This makes soft flexible slices that will roll up and unroll, and not break!

1 Cup warm water
1 tsp vinegar
½ Cup flax seed gel (see below)
¼ Cup oil
¼ Cup sugar
1Tbsp+2 tsp instant active yeast
1 ½ tsp xanthan gum
½ tsp salt
2 ½ Cups GF flour

Flax seed gel, there are many online recipes to try and some videos too. The most popular being 1T ground flax to 3T warm water per egg replacement, let sit 15 min.

I can’t tell you my recipe because I don’t know it. I think I messed up on the water, I had to keep adding more flax, finally I nuked it at 15sec.intervals until it became nice and thick and goopy. Then, I just measured out 1/2 cup to equal 2 large eggs.
