♦ R E C I P E ♦

Lentil Loafs (GF)
♦ ♦ ♦ ♦ ♦ ♦ ♦ ♦ ♦ ♦
1/4 cup brown (green) lentils
2/3 cup vegetable stock (low sodium)
1/4 cup water
1 dried bay leaf
1/3 cup steel cut oats (GF)
1/2 cup water, boiled*
1/8 cup ketchup
1/2 cup quick oats (GF)
2 tablespoons tamari (GF low sodium)
1 Tb flaxseed, ground
1 Tb vegan Worcestershire sauce**
1 Tb tahini (optional)
1/2 tsp molasses
1/8 tsp thyme. dried
1/4 tsp oregano, dried
1/2 basil, dried
black pepper to taste
1 Tb nutritional yeast (optional)
Topping:
2 Tb ketchup
2 tsp BBQ sauce

Combine the lentils, vegetable stock, cup of water and bay leaf in a saucepan. Bring to a boil, then lower heat to medium-low, cover, and cook for 20 minutes. Once done, add the steel cut oats and boiling water, cover, and cook on medium-low heat for another 10-12 minutes, until tender.
Meanwhile, preheat the oven to 375°F. Line a non-stick mini loaf pan with a strip of parchment paper.
Combine the topping ingredients in a small bowl.
Once the steel cut oats are cooked, remove the bay leaf and add all the remaining ingredients (except topping). Stir very well. Transfer the mixture to prepared pan and pack it in. Spread the topping mixture over the top.
Cover the dish with parchment paper then aluminum foil and bake for 15 to 20 minutes. Remove the paper/ foil and bake for another 5 to 7 minutes.
**Replace vegan Worcestershire sauce: 1/2 tsp tamari, 1/2 tsp molasses and 2 tsp apple cider vinegar
*Adjust water as needed.
