On the 4th day of Vegmas my true love baked for me, 4 pies of wheat, 3 lentil loafs, 2 Snowman Pops & a House made of Gingerbread and candy!

✦ VEGAN Seitan/Meat Pies ✦

✦Pie crust✦
1 cup whole wheat flour
⅓ cup mashed yellow sweet potato
6 TB unsweetened soy milk
1 tsp apple vinegar
1/2 tsp baking powder
1/2 tsp salt
Combine flour, baking powder, salt in a large bowl.
Mix well vinegar, soy milk, and sweet potato in a small bowl.
Add wet mixture to large bowl. Mix well, knead to form smooth dough. Add more flour if needed.
Cover, set aside for 30 min.

✦vegan meat and vegetable filling✦
1 cup upton’s or cooked brown lentils (see below)
1 cup veggie broth
2 Tbs veggie broth
2 cloves garlic minced
1/2 onion finely chopped
1/4 tsp black pepper
1/2 tsp cinnamon
1/2 tsp herb de provence
1/4 tsp cloves
1/4 allspice
1/4 sea salt
1 medium potato grated
1 small carrot peeled, grated
2 medium mushrooms finely chopped
1/4 cup green peas, frozen
1/4 cup bread crumbs
Heat 2TB veg broth in a large pot on medium heat. Add garlic, onion, pepper. Saute, stirring regularly, 3-5 min.
Add potatoes, carrot, peas, 1/4 cup veg broth. Return to low boil, reduce to low heat. Simmer, covered, stirring occasionally, 10 min.
Add mushrooms, cooked seitan or lentil to large pot. Increase heat to medium. Cook, partially covered, stirring regularly, 5 min.
Add veg broth, bread crumbs. Mix well. Cook, stirring constantly, 3-5 min. Turn off heat, cover.

✦How to make and bake the pies✦
Preheat oven to 350°F
Break dough into 8 small ball. Place each ball in between parchment paper, lightly dusted, and wax paper on top. Roll out dough to flatten.
In a non-stick mini pie pan evenly pack the crust, spoon in a very large heaping portion of filling. Push filling down.
Pinch the top pieces of flatten dough into place with a fork. Cut air vent.
Bake 20-25 min until crust is light golden brown. Allow to cool 5-10 min before serving.

✦Variations✦
If using lentils instead setian, bring 2 cups water to boil in small pot. Add rinsed lentils, return to boil. Reduce to medium low heat, cover. Cook lentils until soft, about 15 min.
