Jen stirs up a vegetarian curry oatmeal that will make your tummy feel all warm and fuzzy. <\/p>\n<p>Subscribe to Jen&#8217;s channel: http:\/\/taste.md\/1T2BCK8<\/p>\n<p>INGREDIENTS<\/p>\n<p>For the oatmeal:<\/p>\n<p>1 cup quick cooking steel cut oats<br \/>\n1 \u00bd cups coconut milk<br \/>\n\u00bd cup water<br \/>\n1 tbsp butter<br \/>\n1 medium zucchini, medium diced<br \/>\n\u00bd tsp ginger, peeled and grated<br \/>\n1 garlic clove, grated<br \/>\n\u00bd tsp turmeric powder<br \/>\n\u00bc tsp ground cumin<br \/>\n\u00bc tsp ground coriander<br \/>\n\u00bc tsp ground cardamon<br \/>\n\u00bc tsp cayenne pepper<br \/>\nSalt &#038; pepper to taste<\/p>\n<p>For the toppings:<\/p>\n<p>1 tbsp green onions, thinly sliced<br \/>\n1 tbsp pine nuts, toasted<br \/>\n1 tbsp golden raisins<\/p>\n<p>RECIPE <\/p>\n<p>In a medium pot on medium-high heat, melt butter and saut\u00e9 ginger, garlic, and spices, until it smells slightly nutty and fragrant. <\/p>\n<p>Add zucchini and stir occasionally. Cook for about 2-3 minutes, or until tender. Remove half and set aside for the topping.<\/p>\n<p>Add coconut milk and water to the pot and bring to a boil. Stir in the oats and cook on medium-low for about 6-8 minutes, or until softened to your liking. Taste for salt and pepper.<\/p>\n<p>Serve in bowls and top with reserved zucchini, toasted pine nuts, golden raisins, and green onions.<br \/>\n___<\/p>\n<p>Follow us!
