Enjoy!<br \/>\nSUBSCRIBE for more great recipes!  http:\/\/bit.ly\/BethsEntertaining<br \/>\nSUBSCRIBE to my gardening channel! http:\/\/bit.ly\/InBethsGarden<br \/>\nVISIT MY WEBSITE: http:\/\/bit.ly\/EWBWebsite<\/p>\n<p>For more great recipe ideas visit:  http:\/\/campbellk.it\/1MjaPl0<\/p>\n<p>BETH\u2019S COQ AU VIN RECIPE<br \/>\nServes 6<\/p>\n<p>INGREDIENTS:<br \/>\n7 pieces of apple wood smoked bacon, diced into small strips<br \/>\n1 tsp (5 ml) butter<br \/>\n6 chicken legs, skin on, bone in<br \/>\n2 carrots, cut into 1 inch (2.5 cm) chunks, about 1 \u00bd cups (225 g)<br \/>\n\u00be cup (110 g) frozen pearl onions<br \/>\n\u00bd tsp (2.5 ml) dried thyme<br \/>\n1\/3 cup (80 ml) cognac<br \/>\n\u00bd cup (120 ml) red wine<br \/>\n1 cup (240 ml) Swanson\u00ae Chicken Broth<br \/>\n3 garlic cloves<br \/>\n2 tbsp (30 ml) tomato paste<br \/>\n2 tbsp (30 ml) fresh thyme<br \/>\n1 bay leaf<br \/>\n1 tsp (5 ml) salt<br \/>\n2 tbsp (13g) cornstarch or cornflour<br \/>\n2 tbsp (30 ml) water<br \/>\n3 dashes Worcestershire sauce<br \/>\n1 tbsp (15 g) butter<br \/>\n1 \u00bd cups (360 ml) white button mushrooms, quartered<\/p>\n<p>METHOD:<br \/>\nIn a large Dutch oven or oven safe casserole with a lid, melt butter and saut\u00e9 bacon.  Once crispy, transfer with a slotted spoon to a plate lined with paper towel.  Leave fat in pan.<\/p>\n<p>Season chicken legs on both sides with salt and pepper to taste.<\/p>\n<p>In the bacon fat, brown chicken, on both sides. Transfer to a plate to rest.<\/p>\n<p>In the chicken fat, saut\u00e9 carrots and onions until browned and tender. Add \u00bd tsp of dried thyme.<\/p>\n<p>Turn off flame while adding alcohol.  Add cognac and wine, stir.  Turn flame back on. Add chicken broth.<\/p>\n<p>Add garlic, tomato paste, thyme, bay leaf, and salt.  Stir to combine.<\/p>\n<p>Add 3 dashes of Worcestershire Sauce. <\/p>\n<p>Create a \u201cslurry\u201d by combining 2 tbsp of cornstarch with 2 tbsp of water, mix to combine.<\/p>\n<p>Add the slurry to the pot and bring to a boil, this will allow the sauce to thicken. Then lower to a simmer. If you find your sauce is too thick, add more chicken broth to thin it out until desired consistency.<\/p>\n<p>Add in the cooked bacon and stir.<\/p>\n<p>Place the chicken, skin side up, back into the pot.  Spoon the sauce over the chicken so it is coated. Place lid on top.<\/p>\n<p>Bake at 350F (175C) for 25 mins.<\/p>\n<p>Meanwhile saut\u00e9 mushrooms in butter until browned.<\/p>\n<p>At the 25 min mark, add mushrooms to the pot.  Cover and bake for another 20 mins.<\/p>\n<p>Then remove lid, garnish with fresh thyme, and bring to the table!<\/p>\n<p>If making this the day ahead cool completely, and refrigerate, covered.  Before reheating, add a splash of chicken broth to loosen sauce and cover and heat at 300F for 20-30 mins until chicken is warmed through<\/p>\n<p>Serve with mashed potatoes and crusty French bread.
