Frankie Celenza literally uses a brick in this recipe. It keeps the chicken flat and evenly cooked and makes for beautiful grill marks across the chicken breasts. The end result is a delicious pollo al mattone, or brick chicken. <\/p>\n<p>Subscribe to Frankie&#8217;s channel: http:\/\/taste.md\/1Svw5wf<\/p>\n<p>INGREDIENTS <\/p>\n<p>1-2 garlic cloves, scored<br \/>\n2-3 tbls capers, minced<br \/>\n1 lemon, juiced<br \/>\n1 bunch fresh rosemary<br \/>\n\u2154 cup olive oil<br \/>\n2 boneless\/skinless chicken breasts, butterflied<br \/>\nSalt and pepper<br \/>\n1 red onion wedges<br \/>\n3-5 scallions<br \/>\nSplash of white wine<\/p>\n<p>Extra equipment:<\/p>\n<p>1 brick wrapped in tin foil<\/p>\n<p>RECIPE <\/p>\n<p>In a large bowl make the marinade. Add olive oil, minced capers, garlic, salt and pepper. Mix well and reserve some for basting the chicken.<\/p>\n<p>Add the chicken into the marinade and refridgerate for 30 minutes &#8211; 1 hr.<\/p>\n<p>Pre-heat a grill pan to high heat.<\/p>\n<p>Place chicken on the grill for 5 minutes, once flipped place brick on the chicken to avoid any curling. Baste with extra marinade after flipping.<\/p>\n<p>Place onions directly on the grill and charr through, adding some of the reserved marinade for flavor.<\/p>\n<p>Plate, serve and enjoy.<br \/>\n___<\/p>\n<p>Follow us!
