(These links go to amazon where I am an affiliate partner)<\/p>\n<p>SIGN UP FOR MY NEWSLETTER! <\/p>\n<p>WATCH MORE SUMMER RECIPES!<br \/>\nStrawberry Shortcakes<br \/>\nUltimate Burger<br \/>\nApricot Galette<br \/>\nGrilled Chicken Chimichurri<br \/>\nCoconut Ice Cream Baskets<br \/>\nChicken Brochettes<br \/>\nGrilled Ribeye<br \/>\nSoy Chicken<br \/>\nLobster Thermidor<br \/>\nHomemade Hummus<br \/>\nPlum Crumble <\/p>\n<p>BETH&#8217;S TOMATE FARCIE RECIPE<br \/>\nServes 6-8<\/p>\n<p>INGREDIENTS:<br \/>\n(18) Medium Tomatoes \u201con the vine\u201d<br \/>\n2 tsp (10 ml) Herbs de Provence<br \/>\n2lbs (900g) pound ground pork<br \/>\n3 garlic cloves minced<br \/>\n2 tsp (15 ml) salt<br \/>\nfreshly ground pepper<br \/>\n2 tbsp (30 ml) fresh parsley minced<br \/>\n1 cup (240 ml) diced sandwich bread mixed with 3 tbsp (45 ml) milk<br \/>\n\u00bc cup (60 ml) dry white wine<\/p>\n<p>METHOD:<br \/>\nClip vines gently from tomatoes, leaving the stems intact on each tomato at least 1 inch high.<\/p>\n<p>Slice tops off the tomatoes and set aside.<\/p>\n<p>Core tomatoes and remove their interior flesh, transfer to a bowl.  (keep for a simple tomato sauce, recipe below)<\/p>\n<p>Place hollowed tomatoes in a shallow, oven safe casserole dish and set aside.<\/p>\n<p>Combine pork, garlic, salt, pepper, herbs de provence, parsley and bread that has been soaked in the milk. Combine with hands until incorporated. <\/p>\n<p>With an ice cream scooper, scoop meat into tomatoes and top with their \u201clids\u201d.<\/p>\n<p>Add \u00bc cup of wine to the bottom of the dish.<\/p>\n<p>Place in a 400F (200C) oven for 45 mins.  Reduce oven to 350F (175C).  Brush lids with olive oil, cover with foil and bake another 10-15 mins until tomatoes are softened and meat is cooked through.<\/p>\n<p>Serve with white rice. Enjoy! <\/p>\n<p>BETH&#8217;S SIMPLE TOMATO SAUCE<br \/>\nServes 4<\/p>\n<p>INGREDIENTS:<br \/>\n2 cups (480 ml) tomato pulp and juice (from cored tomatoes)<br \/>\n2 tbsp (30 ml) dry white wine (Chardonnay or Sauvignon Blanc)<br \/>\n1\/4 tsp (1.25ml) salt<br \/>\n1\/2 tsp (2.5 ml) herbs de provence<br \/>\nPepper to taste<br \/>\n1 cup plain tomato sauce<br \/>\n3 tbsp (45 ml) tomato paste<br \/>\n2 garlic cloves<br \/>\n2 tbsp (30 ml) freshly chopped basil<br \/>\nFreshly grated parmesan to taste<\/p>\n<p>METHOD:<br \/>\nSimmer tomato pulp and juice until reduced by 1\/3.  Add wine and simmer 2-3 minutes.<\/p>\n<p>Add tomato sauce and paste and stir to combine. Add salt, pepper, herbs de provence and garlic.  Simmer for 15-20 mins until flavors mellow and sauce sweetens.<\/p>\n<p>Add freshly chopped basil and toss with pasta of choice and top with freshly grated parmesan cheese.
