In today\u2019s video I am showing you a healthy dessert recipe for health carrot cake muffins with vegan cream cheese icing! These healthy carrot cupcakes are easy and super yummy to make! <\/p>\n<p>2 eggs (can try flax egg substitute but I haven\u2019t!)<br \/>\n3 tbsp almond milk<br \/>\n2 tbsp coconut oil<br \/>\n1\/4 cup maple syrup<br \/>\n1\/2 tbsp apple cider vinegar<br \/>\ndash vanilla<br \/>\n1\/3 cup coconut flour<br \/>\nNOTE FOR SUBSTITUTING COCONUT FLOUR: use a ratio of 1:4 ie. 1\/4 cup coconut flour to 1 cup another flour!<br \/>\n2 tbsp tapioca flour<br \/>\n1\/2 tsp baking powder<br \/>\n1\/4 tsp baking soda<br \/>\npinch himalayan salt<br \/>\n1 1\/2 tsp cinnamon<br \/>\n1\/4 tsp ginger<br \/>\n1 cup grated carrot<br \/>\n350F for 12-15 minuts or until toothpick somes out clean! <\/p>\n<p>Vegan Cream Cheese Icing<br \/>\n1 can coconut milk<br \/>\n1\/4 vegan cream cheese <\/p>\n<p>Copper cups and spoons: <\/p>\n<p>&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;<\/p>\n<p>Hey, What&#8217;s up, Hello :) My name is Olivia but you can also call me Liv!
