{"id":33818,"date":"2018-09-23T21:43:03","date_gmt":"2018-09-23T20:43:03","guid":{"rendered":"https:\/\/lovesharingfood.com\/coconut-tres-leches-cake-zoe-kelly\/"},"modified":"2018-09-23T21:43:03","modified_gmt":"2018-09-23T20:43:03","slug":"coconut-tres-leches-cake-zoe-kelly","status":"publish","type":"post","link":"https:\/\/lovesharingfood.com\/coconut-tres-leches-cake-zoe-kelly\/","title":{"rendered":"Coconut Tres Leches Cake | Zoe Kelly"},"content":{"rendered":"<p>[ad_1]<br \/>\n<iframe loading=\"lazy\" width=\"560\" height=\"315\" src=\"https:\/\/www.youtube.com\/embed\/X2WBkZHUq6g\" frameborder=\"0\" allowfullscreen><\/iframe><br \/>\n[ad_2]<\/p>\n<p>This tres leches cake keeps the evaporated and condensed milk but switches things up with coconut milk.<\/p>\n<p>Ingredients\u2014<\/p>\n<p>For the cake:<br \/>\n1 cup all-purpose flour<br \/>\n1\/4 teaspoon cinnamon<br \/>\n6 large eggs, room temperature<br \/>\n1 cup granulated sugar<br \/>\n1 teaspoon vanilla extract<\/p>\n<p>Milk mixture:<br \/>\n1 14-ounce can condensed milk<br \/>\n1\/2 cup evaporated milk<br \/>\n1\/2 cup coconut milk<br \/>\nButter to cover baking pan<\/p>\n<p>Steps\u2014<br \/>\nPreheat the oven to 325 degrees, and move the rack to the middle of the oven.<\/p>\n<p>Grease a 9&#215;13 baking pan until well coated. Sift the flour into a mixing bowl, making sure to remove any lumps. Add the cinnamon and set aside.<\/p>\n<p>In two separate mixing bowls, divide the egg whites from the yolks. Add sugar and vanilla to the egg yolks and mix on high speed until smooth, about 3 to 4 minutes. Set aside.<\/p>\n<p>On high speed, whip the egg whites until stiff peaks form, about 2 minutes.<\/p>\n<p>Using a spatula, gently fold the egg whites into the egg yolk and sugar mixture.<\/p>\n<p>Gently sprinkle the flour, about 1\/4 cup at a time, into the eggs and fold until combined. Pour batter into the baking pan. Bake for about 20 to 25 minutes or until toothpick comes out clean.<\/p>\n<p>While cake is baking, combine the \u201ctres leches\u201d\u2014 coconut milk, condensed milk and evaporated milk \u2014 in a clean mixing bowl and set aside.<\/p>\n<p>Remove the cake from the oven and place on a wire cooling rack. Allow the cake to cool for about 15 minutes. Using a fork, poke holes throughout the cake. Slowly pour the tres leches mixture on top of the cake.
