Here’s the recipe for my delicious lemon meringue cupcakes, this mix will make 6 cupcakes.
For the cupcakes;
140g Unsalted butter
100g Goden caster sugar
Zest of 2 lemons
2 Eggs
140g Self raising flour
Bake for 10-15 mins at 170c fan
For the meringues;
2 Eggs whites
110g Caster sugar
Turn oven down to 110c fan
bake in oven for a further 10 mins or until lovely and golden.
