How to make cupcake ice cream cones or ice cream cupcakes:
Line muffin tray or cupcake tray with flat bottom ice cream cones. My tray (from Ikea) is high enough to hold them firmly in place. If you have the lower type you can place some tin foil around the sides to make them fit better.
Using a small ice cream scoop fill the cones with cupcake mixture to about 2/3 the height of the cone – just under the line before the cone widens out at the top. You can use a packet mix or use my cupcake recipe but remember these will take slightly long to cook than the instructions cause of the cone shape.
Bake in a pre heated over for about 25 mins at 175 degrees C. All ovens are different so check at about 20 mins. Done when a skewer comes out clean or with a few crumbs on it. Remove from tray & let cool completely before frosting.
To frost you can use my marshmallow frosting recipe or my swiss meringue buttercream recipe or any other frosting or buttercream you like. I used a piping bag & a No. 17 Star tip from Loyal (brand) – you can just use a large zip lock bag with the corner cut out to pipe a rounded swirl if you don't have piping bags or star tip.
