Watch how to make ‘Eggless Mango Cupcakes’, a very delectable muffin recipe by chef Kanak.
It’s the mango season and here’s chef Kanak who brings you a delicious mango treat in the form of ‘Eggless Mango Muffins’. These are soft, eggless muffins / cupcakes with the flavour of mango and are surely going to make you crave for more.
Ingredients:
Dry Ingredients:
1.5 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1/2 tsp cardamom powder
pinch of nutmeg powder (optional)
Wet Ingredients:
1 cup mango puree
1/2 cup sugar or more as per taste
1/3 cup oil / melted butter
2 tbsp yogurt
2 tbsp milk
Mango Mousse Icing:
1/2 cup whipped cream
3 tbsp sugar / honey
1/4 cup mango puree
Method:
– Preheat the oven at 180 degrees Celsius.
– In a bowl, add all the dry ingredients (all purpose flour, baking powder, baking soda, salt, cardamom powder and the nutmeg powder) and mix well. Once done, keep the bowl aside.
– In another large bowl, add all the wet ingredients. First add the mango puree and sugar and mix well using a blender until the sugar blends completely. Then add the oil and yogurt and again blend well until the mixture is smooth.
– Add the dry ingredients mixture to this and fold well using a spatula or a hand blender.
– Add the milk and blend well until it becomes smooth.
– The batter for muffins is ready.
To make muffins:
– Pour the mixture into the muffin cups.
– Once done, put them in the pre-heated oven and bake them for around 18-20 minutes.
– Once done, let them cool down to room temperature before icing.
For icing:
Pour the mango mousse icing into a piping bag and make your desired design on the muffins. Garnish with some coloured sprinkles and pistachios on top.
