Learn how to make your own gluten free bread with your own gluten free flour mix. It’s much tastier than store bought and well worth the effort!
BREAD FLOUR BLENDS
Makes 41⁄2 cups (700g)
2¾ cups (450g) white or brown rice flour
⅔ cup (115g) potato flour
½ cup (60g) tapioca flour
½ cup (60g) cornstarch
4 tsp xanthan gum
To make a classic loaf, you’ll need:
2¾ cups (450g) gluten-free bread flour blend, plus extra for dusting
oil for greasing
2 tsp fast-acting dry yeast
1 tsp salt
1 tbsp sugar
1 egg
2 tbsp vegetable oil
1 tsp vinegar
1 egg, beaten, for brushing the top of the loaf
Special equipment:
a 1lb (450g) loaf pan
plastic wrap
