Cold? But still want ice cream? This is the recipe for you! An Autumnal twist on a Summer classic. Everyone’s a winner!

Recipe –

For the Ice cream…
500ml tub of vanilla ice cream
20-30g honeycomb

For the Cookies…
380g plain flour
2tsp soda
1/2 tsp ground ginger
1/4 each of cinnamon, nutmeg and ground cloves
110g unsalted butter, soft
225g caster sugar
1 lg egg
180g golden syrup
Caster sugar for rolling the dough in
