I’m not sure how many people from Naples actually eat Neapolitan ice cream but for me, growing up, it was the best bit about our trips to the local Italian restaurant and I’ve always loved the combination of the simple flavours: vanilla, chocolate & strawberry. Here I’ve taken this childhood favourite of mine and magicked it in to cupcake form. Enjoy!
Recipe –
200g Bourbon chocolate biscuits (or your favourite chocolate biccy)
50g melted butter
1 tbsp Golden syrup
125g self raising flour
125g caster sugar
1/4 tsp bicarbonate of soda
125g unsalted butter, soft
2 lg free range eggs
200g unsalted butter, soft
450g icing sugar, sifted
6-8 tbsp smooth strawberry jam
wafers to decorate!
