How To Make Pickled Soy Garlic

Ingredients:

1 ½ cups water
½ cup lemon juice
1 cup rice vinegar
2 tbsp salt
¼ cup soy sauce
½ cup honey
1 tsp black peppercorns
1 tsp coriander seeds
2 star anise
1 whole dried chili
3, peels from an orange, about an inch wide
1 lb garlic, peeled

Directions:

Start by making the brine. Put the water, lemon juice, vinegar, soy sauce, salt and honey in a medium pot and heat until the honey dissolves. Remove from the heat and add the rest of the ingredients, except for the garlic. Allow this mixture to cool completely.

Put the garlic in a non-reactive container and pour the brine and all the seasonings over the top. Put in the refrigerator and let sit for 2-4 weeks. Check the garlic by biting into a clove. Depending on how cold your refrigerator is and how big the garlic cloves are, the pickling time will vary.
