The Big Lebowski is far and away my favourite movie of all time. The Dude is my all time favourite character. If you have never seen it then there is a good chance that you will not know what the hell is going on in this video but the main thing is that the cupcakes turned out DELICIOUS!
Recipe-
For the cupcakes…
125g unsalted butter, soft
125g self raising flour
125g caster sugar
1/4 tsp bicarbonate of soda
2 lg free-range eggs
1.5 tbsp strong coffee/espresso
Buttercream…
150g unsalted butter, soft
345g icing sugar, sifted
2 tbsp vodka or milk
2 tbsp Kahlua or strong coffee
dash of vanilla extract if you’re not using alcohol
Ganache…
100g double cream
100g dark chocolate chips
1 tbsp Kahlua (optional)
Filling…
100g double cream
4 tsp Kahlua/or coffee with a dash of vanilla
