This easy recipe for Jerk Seasoned Roast Chicken recipe shows how a simple seasoning blend can perk up a simple roasted chicken dinner. Ingredients list:
1 chicken (about 3 lbs.) cut up, rinsed and dried
1 large sweet potato, peeled and cut into bite sized pieces
2 medium potatoes, peeled and cut into bite sized pieces
2 carrots, peeled and cut into bite sized pieces
1 medium onion cut into wedges,
2 cloves of minced garlic
3 tbsp olive oil (divided 2 tbsp & 1 tbsp)
4 tsp Jamaican jerk seasoning (divided in half)
2 tbsp cider vinegar
1 tsp thyme (divided in half)
1 tsp hot sauce, optional
½ tsp red pepper flakes, optional
salt and pepper to taste
