In the Northwest, it can get pretty foggy and cold. So if you’re looking for a good defense, make yourself some London Fog. FULL RECIPE BELOW.

LONDON FOG
Serves 1

INGREDIENTS:
For vanilla syrup:
-1 cup sugar
-1 vanilla bean, split lengthwise
-1 cup water

For the Fog:
-1/2 T Earl Gray Tea
-1 cup boiling water
-1/2 cup milk

special equipment:
tea ball

Process:

For the syrup:
-Combine all ingredients in a small sauce pan
-Stir until sugar dissolves and bring liquid to a boil.
-Reduce heat and simmer until syrup thickens about 20 minutes
-Let stand until cool

For the Drink:
-Fill tea ball with tea
-Add to a kettle and let steep 3-5 minutes
-Meanwhile, heat milk in small sauce pan, not boiling (135-150 Degrees F)
-Remove milk from heat, and whisk until foamy
-Fill mug halfway with tea
-Stir in two tablespoons of the vanilla syrup
-Fill the glass the rest of the way up with hot milk, holding back the foam
-Top with a few spoonfuls of foam to finish
