Mac’n Cheese Balls :: Day 11 of 12 Days of Vegan Christmas Recipes

On the 11th Day of Vegmas My Vegan love made for me, 11 balls of macaroni, 10 slices of California Veggie, 9 Lasagnas Leaping, 8 Truffles Truffling, 7 Slices of gingerbread french toast, 6 Fruity Tartlets, & 5 Peppermint Cupcakes!… 4 pies of wheat, 3 lentil loafs, 2 Snowman Pops & a House made of Gingerbread and candy!

✦ Mac’n Cheese Balls ✦ (note give us a little more time to edit these up, you can watch the vid & get a good idea, but we are strapped for time right now so Mr. Vegan just scratched out here what he had time to put down!)
We used three different methods!
#1. Box of Annie’s Organic Gluten Free Vegan Elbows & Creamy Sauce The vegan cheese sauce in this had an odd taste, just mostly like nutritional yeast. This is a fat-free vegan option, though. The noodles did not lend well to balling, though. We suggest you add some extra spice to this mix if you want to eat it regular!
#2. Nacho Mama’s Vegan Queso Mixed with Tempeh Bacon & whole wheat noodles plus panko. This mix formed the best balls! Its easy to toss together with zero skill!
#3. Home made cheese sauce. This tastes the best, but the cashew butter keeps the noodles from sticking together, probably would have worked better with wheat noodles that provide extra stickiness.
Cashew “Cheese” Sauce
1 tsp apple cider vinegar
1 Tb chickpea flour
1 tsp garlic powder
2 Tb raw cashew butter
1/2 tsp salt
pinch pepper
1 cup veg stock

*Don’t rinse your pasta!

After you mix the pasta & your choice of vegan cheese sauce, ball them up with some Panko bread crumbs (you can mix them in the mixture, too, to help them ball up & roll them in the bread crumbs.

Bake on 350 until golden brown.
