Nothing says summer more like s’mores to me, so I thought I’d bake you guys some s’mores cupcakes to celebrate #CampAim!!!

1 1/4 cup graham cracker crumbs
5 tbsp butter, melted
5 tbsp sugar
Chocolate Cupcakes
1 cup flour
1 cup sugar
1/4 + 1/8 cup Dark Cocoa powder (not dutch process)
1 tsp baking soda
1/2 tsp salt
1 egg
1/2 cup buttermilk
1/2 cup vegetable oil
1 tsp vanilla
1/2 cup boiling water
-MARSHMALLOW FILLING-
1/4 cup unsalted butter (room temp)
2/3 cup marshmallow fluff
1 teaspoon vanilla extract
2 Tablespoons heavy cream
1 cup powdered sugar
1/4 teaspoon salt
-CHOCOLATE FROSTING-
1 and 3/4 cups powdered sugar
1/4 cup unsweetened cocoa powder
1/2 cup unsalted butter (room temp)
2 Tablespoons (30ml) heavy cream (more as needed)
1 teaspoon vanilla extract
a pinch of salt (more to taste)
