I love going to bakeries. Not only for the great tasting pastries, but I like to see what’s trending. On a recent trip, one cake that stood out for me was this Strawberry Cake, often called a Strawberry Gateau. It looked so elegant. I liked that it was frosted with a smooth coating of a stabilized Whipped Cream that had pretty red flecks of strawberries poking through. And it wasn’t I cut into the cake that I saw that it was full of fresh strawberries. And not to forget the actual cake, it was two layers of a vanilla flavored Genoise that had been soaked with a lemon flavored sugar syrup. I think of this cake as a sophisticated version of a Strawberry Shortcake.
