7- LAYER DIP SLIDERS:

INGREDIENTS

SLIDERS:

– ¼ cup cooked black beans
– 1 tablespoons olive oil
– 1 teaspoon paprika
– 1 teaspoon cumin
– 1 teaspoon garlic powder
– kosher salt and ground black pepper
– ½ pound 80/20 ground beef
– Slider buns
– Lettuce
– Sliced black olives

GUACAMOLE

– 2 hass avocados
– 1 cloves garlic
– 1/2 small red onion
– 2 jalapeno chiles
– 2 tomatoes, seeded and chopped
– 3 tablespoons finely chopped cilantro
– juice of 2 limes
– Salt

SPICY SOUR CREAM
– 1 cup sour cream
– 1 hot sauce to taste
– cumin to taste

Combine the black beans, olive oil, cumin, garlic, paprika and garlic powder with a fork until combined. Add the ground beef and form into 8 patties. Season with salt and pepper and cook the burgers 1-2 minutes per side, adding cheese during the final 30 seconds.

Mash the avocado ingredients together until combined, saving the lime juice and seasonings for last.

Top each bun bottom with the black been and beef patty some lettuce, guacamole, sour cream and sliced olives.

GREEN ONION AND CHEDDAR SAVORY DONUTS with “WING SAUCE”

INGREDIENTS:

DONUTS:

– 1 cup all­ purpose flour
– 1/2 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 1/2 teaspoon freshly grated nutmeg
– 1 tablespoons white sugar
– 2 tablespoons browned butter
– 1 large egg
– 1/2 cup buttermilk
– 1/2 cup shredded cheddar cheese, divided
– 1/4 cup thinly sliced green onion
– 1 jalapeno, diced

SAUCE:

– 1/3 cup honey
– 1 1/2 teaspoons Dijon mustard
– 2 tablespoons apple cider vinegar

Place a rack in the upper third of the oven and preheat oven to 350 F. Lightly grease a doughnut pan and sprinkle with the 1/4 cup of shredded cheese; set aside.

In a medium bowl, whisk together flour, baking powder, baking soda, salt, nutmeg, and sugar. Set aside. In a small bowl whisk together egg, buttermilk, green onion, and jalapeno. Add the browned butter and whisk into the wet ingredients.

Combine the wet and dry ingredients, stirring together just until everything is coated. Use two small spoons to dollop batter into the prepared pan (one to scoop and one to push the batter). Smooth out and fill each doughnut in the pan three ­quarters full with batter. Place in the oven and bake for 12 to 13 minutes. They won’t look super golden brown in the oven. Remove the doughnut pan from the oven and immediately flip the doughnuts out. This next bit is totally optional, but to make them extra golden brown, put the donuts back in oven on a tray, cheesy side up, and broil them for a minute. Keep a close eye on them, since they’ll burn easily, but it bubbles the cheese a bit and adds just a little bit of crunch.

To create the sauce, heat all ingredients to a simmer (about 4-5 mins) and serve. Best enjoyed warm!
