Friends, busy life style calls for some quick and easy recipes and here I am sharing Kothimbir Vadi cooked in microwave oven in 3 minutes and then shallow fried for 2 minutes. Kothimbir Vadi are crispy coriander fritters made from chickpea flour, lots of coriander leaves and spices like green chilli, chilli powder, ginger, asafoetida, crushed peanuts, sesame seeds, lemon juice and and salt.

Usually, this batter is steamed and then cut into small squares and either deep fried or shallow fried. But I have used microwave oven to save time and the hassle of cleaning more pots.

Instead of deep frying, I have shallow fried the vadis with sesame seeds to make them more nutritious and delicious.
